Retarder proofer for trays or single racks

The ARM48E gives you full control over every stage of the proofing process, from temperature and humidity to timing. It goes from cooling to warming, from low humidity to high humidity at any time.

The retarder proofer holds 20 sheet pans (18" x 26") spaced 2 ½" apart, giving you plenty of capacity for your daily production. The interior is stainless steel for easy cleaning, and the cabinet is well-insulated with 60 mm polyurethane foam for consistent temperature performance.
Control is handled by the Bi-Tronic 4 interface, easy to program. Delivered fully assembled and ready to use.
